Unfortunately now with
: the chines in place the bow has dropped a little too far, taking
: away my rocker.

It's common for skin canoes to hog unless the gunwales have a good, permanent bend (up at the ends) before you install them. Remove yours, block them up at the each end, then use hot water and heavy weights in the center to make a nice deep curve. Leave the weights on for a day or so, and the arc should be more or less permanent.
