I think you should go for the B&C. It will eliminate that rough edge, you won't have to spend the time to bevel each individual strip, all the strips will mate together perfectly, and you won't end up with gaps after you plane/fair the surface. Unless you bevel perfectly, the chance of ending up with gaps after planing/fairing the bare wood is much higher than with B&C. Many guys plane the bevel so that the outside edge is nice and tight, but after planing they end up with gaps between the strips.

Building your own kayak is an awesome experience, but it does have its share of frustrating moments, why add another potential problem to the mix. I just think it's much easier to use B&C.
